Apple Walnut Salad

Hi veggie friends,


Summer and fall are a great time for cooking and baking because there are many great places to buy fresh produce. It is a great time to go to farmers markets or locally-owned produce stands to help your local economy and eat some delicious food. It's also a lot of fun to go to a farmers market and buy some ingredients for a meal you are planning on making later. Also, many farmers markets have stands that sell baked goods (hello, apple cider doughnuts!) that make the trip even more fun.


Salads are great ways to incorporate fresh fruits and vegetables from a farmers market into your meal. Salads also pair well with all kinds of bread. They are even better when you have some awesome dessert afterwards!!

I decided to make this apple walnut salad because I love having fruit in salad, and apples are in season in fall, which makes this a great fruit to incorporate. The nuts and cheese add some protein into the salad, and the avocado is a great addition because it means you do not need to add as much dressing to coat your salad. The dressing I used was Blackberry Walnut, which is like a creamy, blackberry-infused balsamic dressing. This was picked up from a local vendor, and it is a great dressing for this tasty salad!
