Munchin' for Muffins

Hey guys! As the Jonas brothers would say, I'm a sucker for these muffins.
I have been working on a muffin recipe so that I have a semi-healthy, chocolatey snack I can keep on hand at all times. I saw this Pinterest recipe on healthy banana muffins and got inspired to create my own recipe. These muffins are easy, healthy (ish), and super delicious! Here it is!

Ingredients:
Makes about 24 mini muffins
3 Ripe Bananas
1 Egg
1 TBSP honey
3TBSP vegetable oil
4 TBSP applesauce (plus more if needed)
1 tsp baking powder
1/2 tsp baking soda
1 cup flour
1/4 cup cocoa
1/4 tsp sea salt
Dark Chocolate Chips to your liking
Instructions:
Preheat oven to 350F
Mash bananas or beat with mixer.
Combine mashed bananas, egg, honey, applesauce and vegetable oil in a bowl. Add baking powder, baking soda, flour, cocoa and salt and mix. If mix is dry (where you can see uncombined dry ingredients), add up to 2 more TBSP of applesauce so there is no longer dry flour visible. Mixture should be thicker than typical muffin mixes. Add desired amount of chocolate chips, (we went with 1/2 a cup).

Grease a mini muffin tin. Fill wells 2/3 full (cookie scoops are great for this!). Bake muffins for 11-15 minutes, or until toothpick comes out mostly clean from center of the muffin. Take tin out of oven and let muffins sit in tin for 5 minutes before taking muffins out to cool.

The muffins are great at room temperature or warmed up with a little glass of almond milk. Hope you enjoy :)
