Southwest Sweet Potato Bake

Hi everyone,


I don't know about you all, but I am super excited that spring is here (even though it is currently snowing where I am). When it's not snowing, spring is a great time to go outside and enjoy hiking, sports, gardening, and many other activities. These activities are really fun, but can make you very hungry and in need of some good food. I am here to share with you a dinner that I like because it is really easy, as part of the meal can be made ahead of time, plus it's both tasty and nutritious!


Southwest Sweet Potato Bake

Serves 2

Ingredients

  • 1 large sweet potato

  • 1 cup black beans

  • 1/4 cup onion, chopped

  • 1/2 cup shredded cheese, any variety

  • 4 TBSP salsa

  • 1/2 cup guac

  • olive oil

  • pepper, to taste


First you need to cook the sweet potato. This can be done ahead of time, and you can just save the cooked sweet potato in the fridge for a few days before you want the dish. Wash and peel the sweet potato, then cut in even, bite-size cubes pieces. Put pieces on a baking tray, drizzle olive oil over the top, and sprinkle over pepper. Try to make the pieces as evenly coated as possible. Bake in the oven at 425 degrees for about 15 minutes, or until you can pierce the potatoes with a fork.

When it is time to eat, preheat the oven to 350 degrees. Spread the sweet potatoes out in a relatively thin layer without leaving big gaps between the potatoes. Pour the black beans and onions on top. Bake for 5 minutes.

After 5 minutes, take the tray out and sprinkle on the shredded cheese. Bake for an additional 5 minutes, or until the cheese is melted and the rest of the food is warm.


Top the sweet potato bake with salsa and guacamole and dinner is ready!
